I have moved! Well, kind of.

Hi all!

I just wanted to take a quick minute to make sure anyone following knows that I have moved!  I have moved my blog over to a different host and so I won’t be posting here anymore.

I haven’t used my crockpot all winter

I was rereading my 101 in 1001 list and realized that #94 will never become realized.  I challenged myself to find 10 new recipes for my crockpot, which when I made my list was a kitchen tool I used all the time.  A tool that has since been moved to the garage because I needed room in the cupboards.

So why, you might ask, has a kitchen tool fallen so far?  Two words…instant pot.

An instant pot is an electric pressure cooker.  There are entire blogs dedicated to this tool and I will admit to anyone that I have not explored all it can do.  But, I have used it a lot and I love it so much.

Here is a picture of my lovely pot working. There was a ham in there.  The one we were supposed to have for Easter until we all got sick.


The beauty of it is that I don’t have to plan ahead for it.  I don’t know how many times I would plan to make a pork roast using my crockpot and forget to do it in the morning, leaving me with the “What in the hell am I going to make for dinner?!?” question that I had tried to avoid with my well-intentioned Sunday planning.

So, I am slightly altering my plan and going to look for 10 new instant pot recipes!  Until then, here a couple that I have tried and really like!

Beef Stroganoff (I used stew meat because that’s what I had in the freezer!)

Easter did not go quite as planned.  Joe started feeling sick last Thursday afternoon and has pretty much been in bed with a fever since.  The lingering cough I have had for awhile decided to double down and my body hurts from coughing so hard.  Then Taelin decided to throw her hat in the ring for a glorious 10 hours of throwing up.

Eggs, not even hard boiled yet, are sitting in the refrigerator.  Plastic eggs are filled and in a bucket on the table with a note from the Easter Bunny.  Gatorade and saltines were the only things anyone was eating for dinner.   Continue reading

Earth Day 2017

I remember when I was in the 3rd grade my dad, who worked for the Soil Conservation Service, came to my school and helped us plant trees.  I don’t remember if it was for Earth Day or Arbor Day or anything formal and I highly doubt that climate change was a part of the conversation, but I do remember planting those trees.

Earth Day is coming up soon.  Next Saturday, April 22nd to be exact.  It strikes me how different a world Taelin is growing up in.  She was just talking this week about the Great Barrier Reef and how much of it is dying because the ocean is warmer than it used to be.

The current political climate is apparently making room for the argument of whether or not all the scientific data we have been collecting for year is even accurate.  So, it seems like this year, there needs to be a little bit more action on Earth Day than just planting a tree.


Our family will be attending the local March for Science to support well…science.  It is a bit baffling that it even needs to be done but we will be there.

I was doing some reading on what else we might be able to do to recognize the day and came upon Billions Acts of Green which shares some very tangible ideas for what people might do to take action for the earth.  I took the ecological quiz and found out if everyone lived liked I live it would take 4.6 Earths to support us.  Yikes. There is only one earth.
